It may be expensive for personal hosting, but we use Blackmesh. I can heartily recommend them, and their support is awesome. (Their sponsorship of everything PHP doesn't hurt, either.) They understand Drupal very well, and I recently put in a ticket to upgrade our dev server to PHP7 while keeping an eye on a particular Drupal site. In short order, it was up and running with little intervention on my part.

If you are comfortable with Linux and want a high degree of control (as in pick your distro and build from there), I'd recommend Linode. http://linode.com/. Full control of an SSD-backed instance, with great pricing. The offering is similar to Digital Ocean (who pretty much cloned their branding) but in my experience performs a lot better for the same price.

I am using Superb Internet Hosting.  The package is called Grid Iron.  Here is the URL: http://www.superb.net/web-hosting/benefits.
The GridPRO and GridMAX include access logs, at least from the description.  Support is very good, and you should be able to get some information from them about error logs pretty quick.
For example I had them install a new VPC with an updated PHP so that I could use a more recent media wiki and they did not have a problem with that. 

Ask them about PHP requirements too.  I am running PHP 5 .4 so I could not run Drupal 8, but they can update your PHP.
